Leek is a field vegetable that's eaten cooked or stewed mainly in the colder months. Refrigerated and unwashed, this product can be preserved until spring. The elongated vegetable is composed of leaf sheaths and leaf discs. The part of the vegetable that remains covered with soil during cultivation is white and has a mild onion flavor. The green top of the leek is also used in dishes.
